what big block headers will clear with a 200r4?

It's the same width as most GM Auto's. If you need additional clearance you can remove the Jig mounting ears/lugs or outer corners on the side of the Bellhousing.

so the longtube headers 2241 from hooker would fit fine?

They should, I have a big block with a TH400 and it fits nicely with room on both sides
