We have a 83 Malibu wagon that is getting a new motor and may need to have a hole in the hood and a cowl for the air cleaner. My question is will any of the 78 - 81 hoods fit the car including the nose header?

Yes, any year Malibu hood is interchangeable with any other. I think all years of fenders interchange as well, but the side marker positions may be different.
