just to add...if for some reason you want to manually turn the fan on you need a 2 pole switch (on/off) run one pole to the "- switch control" wire in your diagrams and run the other side to a good ground. I have mine set up that way, it's nice if you want it to keep cooling after it reaches the normal cut off temp of the temp switch (sitting in the staging lanes for example)

Before I redid the wiring last summer I was running a pair of 30 amp relays and never had any problems. Currently I have a pair of 35 amp relays for the fans. Any quality relay should work.....i.e. not the kind you typically find at Wal-Mart...go to the junkyard and start looking under hoods a lot of the 90's vehicles had weatherproof singles under the hood that work great. As far as the switch it can be anything since it's not on the "power" side of the relay it's just used as a ground to trigger the relay in place of the temp switch so it really won't see a load at all.
