My 355 Build Questions

Well guys the little 267 has got to go. I am building a 355 for my 1980 El Camino instead and throwing it in there. I have this 355 short block with about 100 miles on it with TRW L2256 .030 pistons (supposed to have 9.72:1 compression with 64cc heads). I was going to use this engine in my 63 Chevy II wagon but decided to just wait and buy a 350HP crate motor for that car instead. Keep in mind this 80 El Camino is going to be my daily driver but am hoping to get about 330HP if it's even possible with what I have.
Anyways I have a few questions about this build...
1.) First one is a little hard to determine without knowing how far down the piston is in the bore, gasket thickness, etc but if these flat top pistons are 9.72:1 with 64cc heads then estimated, what would the compression be with 76cc heads?
2.) I have a set of 290HP crate motor heads with very very little miles (break in time plus about 1,000 miles or so), would these be OK? They are 76cc's. I want to go Vortec but do not have that money and I am getting these 290HP heads for $300 with the stock non roller rockers and stock pushrods. They are supposed to be fine with a 450 lift cam.
3.) What complete engine gasket kit should I buy? Any opinions on this? Also what about thickness to keep compression at about 9:1?

Any information on this would be great! I have some more questions but will wait to get these answered first to keep things organized.
Thanks!

The CR would drop to ~ 8.7:1

So with these heads I would be better off using a thin head gasket to raise compression as close to 9:1 or 9.5:1 as possible correct? Any idea what thickness? I am completely lost when it comes to these kinds of things.
