Older post but here is how I do mine.

I use a regular charcoal grill, no smoker box. 20lb bag of charcoal, get ashed over then add soaked wood chips on top. I cover the lower rack with tin foil and place large cheapy pan the size of the rack filled with water on that, ribs go on 2nd rack over the water. I keep the temp around 200 degrees till done, usually 8 hours or so. I always use a simple dry rub on my ribs, paprika, salt/pepper, garlic powder. They always come out falling off the bone still juicy.

Different method of cooking but sounds effective.... Try kicking the heat up alittle to around 250 that will shorten your cooking time. Also try spritzing with apple juice every hour or so. It will add a little depth to the flavor!

well, I know this is an old thread but it is the season!!! last weekend i fired this bad boy and smoked some ribs !!! i used a homemade bbq sauce that has bourbon in it that just kicks *ss!!!
