I can understand why you haven't gotten many replies. Very few people really know what they are doing with suspension. I know a little, but not enough at the level you're playing at.
The combination of stock springs and mismatched shocks plus the general "hodge podge" of parts point me to the following conclusion: you need to step up to a matched system of parts and start tuning.
Your problem isn't hitting the rear tires hard enough- you have that covered in spades. The problem you have is everything the suspension does in the half a second AFTER that. That thing is all over the place.
I don't normally go for the "spend a cubic yard of dollars" solution to fix a problem but if you don't know what you're doing with suspension tuning (almost nobody does) it's best to "follow the recipe" and install parts front and rear that are designed to work together as a system. At least for the springs and shocks. Not suggesting you need to instantly pitch the rear sway bar or LCA relocation brackets, but the springs and shocks really have to be matched and set up right to get a reliable launch.
BTW- I think you are brave for running "cheap-o" rear shocks. That's like something I'd do, but only on a 11-12 second car. Heh heh. Allways fun to tell someone you ran in the 9s on "Gabriel Pro-Rider" shocks from Pep Boys!
