I was thinking of changing my valve body in my trans for some time now. I just don't know how a manual valve works. Anybody got any answers or suggestions??

For street use I wouldn't choose a Manual Valvebody.
Manual is just that, you have to shift to every gear manually. Place the shifter in D/3rd and the car will start off in 3rd etc.. You will have to shift to 1st, 2nd & 3rd yourself, no automatice shifts.

I have a 2800 stall converter with the red stripe vacuum module and my shifts still come a lil quick. I'm looking in to a higher stall or converting to a 700r4 or a t56. I'm running 373 gears.

An O/D Trans would work well with the 3.73 gears. A 2004R would be a better/easier swap than the 700R4. Same length as the 350, better 1-2 gear spread & 1st gear ratio also.
Trans swap Info>> http://www.maliburacing.com/transmission_swaps.html
Trans------ 1st---- 2nd--- 3rd-----4th-------------------------------------------
TH2004R ---2.74---1.57--- 1.00--- 0.67----------------------------------------
TH700R4--- 3.06---1.62--- 1.00--- 0.70-----------------------------------------

Most Trans Valvebody & Governors are tuned to a specific rear gear ratio.
To raise the speed/mph of your shifts you need a Governor Recalibration Kit. The adjustable Vacuum Modulators range is only about 3-5mph.
